Get a film student from Craigslist to do the logging for ya. Someone with editing aspirations. Place an ad, explain the project and see who raises a flag. Also, maybe script out some of the re-enactment scenes you want to film and line up video interviews with doctors in the field and have well prepared questions to ask.
A documentary huh? What's it all about? To me, there doesn't seem to be any strict formula to making one, doc's usually find their worth in the editing process. If you have a camera and an outline on the specific subjects you want to tackle within the doc, shoot like crazy but make sure you log and slate everything you're doing so you don't wind up with days of uncatagorized footage to sift throguh when it comes time to cut it all together. Also, try to have a consistant sound throughout or you'll spend major bucks adjusting levels. Toss me some more info, maybe I can give you more advice when I know a bit more about your doc
